Easy Whole30 Breakfast Sausage

Add ground pork and spices to a mixing bowl. I like to add sage, thyme, cayenne, smoked paprika and coriander seeds with plenty of pepper and salt.

Mix it all really well together. I find that squeezing it with my hands instead of using a wooden spoon achieves the best results.

Form the sausage patties by rolling them into a ball and then fattening them. They'll puff up a little when cooking so flatten them well!

Fry the homemade breakfast sausage in a pan over medium-high heat with a little olive oil. All you need is about 5 minutes on either side.

After 5 minutes, flip the sausages over and press them down a little. You want the colour to be brown, almost black in some spots.
