Homemade Whole30 Mayo

Firstly, add eggs, garlic, and salt to a tall glass jar. The opening of the jar should be wide enough to fit a hand blender.

Next, squeeze in some lemon. I prefer lemon to vinegar as the flavour is just delicious, but vinegar would work too!

Before blending, add a little of the oil. This is just to get it started! Careful not too add too much as it may not thicken.

Now we'll begin to blend. Make sure the garlic gets blended first - you don't want any garlic chunks in the mayonnaise.

Once the initial ingredients are well blended, begin to trickle the rest of the oil into the jar slowly.

When the mayonnaise begins to thicken up (a.k.a. emulsify), pour the remaining oil in quicker.

Continue to blend the mayonnaise until all of the ingredients are well combined. The mayonnaise should be thick and shiny.
