Vegan Keto Chili

Begin by adding the onions, garlic, bell pepper, and celery to the bottom of an instant pot.

Next, chop up the mushrooms. I like to pop them in a food processor and blend them until they are finely chopped. Much quicker!

Now add your chopped mushrooms and crushed walnuts into the instant pot. It's probably getting quite full!

Add the spices! I tossed in some chili powder, cumin, paprika, cocoa powder, and salt for seasoning.

Finally add tomato paste, canned diced tomatoes, coconut aminos, and liquid smoke.

Set the instant pot on the bean/chili setting for 15 minutes. Tip: You can also cook this in a slow cooker!

This Instant Pot Vegan Keto Chili is ready! Give it a good stir and adjust the seasoning to your own taste if necessary.

Serve over cauliflower rice or on its own with all of the toppings! I added vegan cheese, dairy-free yogurt, and sliced avocado.
