Sugar-Free Old Fashioned Peanut Butter Fudge

Firstly, add coconut cream (the hard stuff at the top of the can) butter and sweetener to a pot. For the sweetener I used a stevia & erythritol blend.

Once everything has melted and the sweetener has completely dissolved, stir in the natural peanut butter (PB should be just peanuts, no added stuff), vanilla and salt and mix well.

Pour the peanut butter fudge mixture into a parchment/greaseproof paper lines 8x8" baking dish and spread it evenly.

Allow the mixture to cool down to room temperature before placing it in the refrigerator to set. To cut, heat a knife with hot water and slice the peanut butter fudge. This makes the cuts clean.

This Peanut Butter Fudge recipe is keto friendly (less than 1g net carbs per piece), and can also be vegan. Peanut allergies? Swap the peanut butter for almond butter or sunflower seed butter.
