Leftover Turkey Keto Enchilada Casserole

Place shredded leftover turkey into a large mixing bowl. You could also use diced, shredded or leftover chicken, or diced turkey.

Next, add two packages of cream cheese to the shredded meat. I used full fat but light would work as well if you're watching calories.

Add in some keto-friendly enchilada sauce. I have a recipe (which I'll link here, it's really easy!) or you can buy store-bought. Remember to check the net carbs on the label!

Toss in some shredded cheese, saving enough for the topping. I used a mixture of cheddar and grated mozzarella. Pepper Jack would be delicious too!

Mix the shredded leftover turkey (or chicken), cream cheese, enchilada sauce and shredded cheese together well.

Spread the keto leftover turkey enchilada casserole mixture out evenly in a baking dish to ensure even cooking.

Next, sprinkle the remaining cheese over the top of the keto leftover turkey enchilada bake. It turns a beautiful golden colour and melts. Delicious!

Add extra enchilada sauce over the cheese and spread it evenly with a wooden spoon. This packs in so much flavour!

Sprinkle some diced green chilies over the casserole, and then bake it. The chilies can be canned or fresh like I did.

The Keto Leftover Turkey Enchilada Casserole is ready! It is great served on it's own, or with a vegetable side dish. You could even wrap it in a low carb tortilla!
