Boil the green beans in.a large pot until they are just tender, about 10 minutes. You don't need to add any salt to the water.
Sauté the red onion and bacon in a pan with a little oil until they begin to turn brown, but aren't yet crispy.
In a separate pan, toast the almond flour over medium heat, stirring continuously until it begins to turn golden. This takes about 5 minutes.
Add the green beans, 1/2 of the bacon and onion, 1/2 of the grated cheese, stock and cream cheese to a bowl.
Mix these ingredients together very well. It may not seem like it will come together at first - just keep mixing!
In a separate bowl, add the toasted almond flour and remaining bacon and onion along with a little bit of butter.
Mix these ingredients together well. This is the replacement of the traditional crispy fried onions...with bacon! Can't beat that!
In a casserole dish, spread the creamy, cheesy green beans out evenly and top it with the almond flour, bacon and onion mixture.
Sprinkle with the remaining cheese. This will give it a lovely golden cheesy crust on top, which oozes when you dig in! Bake for about 25 minutes.
