Keto Chicken Bacon Ranch Casserole

After preheating the oven, cut and pan fry the bacon until it is cooked and getting crispy. This adds an amazing texture and saltiness to the casserole.

While the bacon is cooking, mix together shredded chicken, ranch, spinach, mozzarella, cheddar and cream cheese, saving some of the mozzarella and cheddar for later.

When the bacon has finished cooking, add it to the rest of the ingredients along with any bacon grease and mix well.

Spoon the mixture into a baking dish and spread it as evenly as possible, getting into all of the corners.

Drizzle with extra ranch and sprinkle with the remaining mozzarella and cheddar. This layer becomes golden and crispy - incredible!

Serve on its own, with salad or roasted veggies, or in a low carb tortilla drizzled with more ranch and hot sauce.
