cream cheese + icing sugar
Begin by beating cream cheese in a large mixing bowl and adding icing sugar or powdered sweetener (for low carb).
salt + flavoring
Add salt and flavoring of your choice. I like to add orange, peppermint, or vanilla.
Chocolate
Pour in melted chocolate. It can be white or dark, or even sugar free like Lily's baking chocolate.
Mix
Mix it all together very well, until everything is one color, and then place it in the fridge to chill for about 30 minutes.
Roll into balls
Roll the chilled chocolate mixture into one-inch balls. I find that having slightly damp hands helps them not to stick.
freeze
Place the chocolate balls onto parchment paper on a baking tray and pop them in the freeze for at least 30 minutes.
Cover with chocolate
Coat the frozen chocolate balls with melted chocolate. I like the contrast of white with brown, but you can choose any kind of chocolate.
remove excess
Pick the chocolate covered truffle up with the fork and tap the fork to remove extra chocolate.
place on tray
Using two forks, scoot the truffle off of one fork with the other and place it onto the baking tray.
sprinkle

Quickly add sprinkles to the top of the truffle. The chocolate solidifies fast so get in there!
