Easy Christmas Roast Beef Recipe

Pat down the beef roast joint and tie it 2-3 times with twine if it's not already tied.

Generously salt the outside and rub it in well to draw out the moisture and help the meat firm up a bit.

Wrap the meat up and allow it to rest at room temperature for a couple of hours.

Mix together seasoning ingredients: orange zest, fresh rosemary, ground black pepper, and olive oil.

Pierce a few holes in the meat and insert sliced garlic.

Rub the seasoning mix all over the outside of the roast beef.

Roast directly on a rack in the oven over a tray until your desired temperature is reach. Full details are in my post!

Check the temperature with a meat thermometer and allow the meat to rest for at least 30 minutes.

After resting the meat, cut the twine with scissors.
