Healthy Chocolate Flaxseed Pudding

Add ground flaxseeds (a.k.a. flaxseed or linseed meal) to a mixing bowl. It has a nutty flavour and is loaded with omega 3s.

Next add in some cocoa powder. This gives it a rich chocolatey taste. It reminds me of edible brownie batter.

Whisk the dry ingredients together. I find this helps the chocolate to blend better with the milk and prevents lumps.

Add in half of the milk. You can use any kind of milk - dairy or plant-based. I like to use unsweetened almond milk to keep it keto-friendly, or oat milk for a creamier version.

Add in a sweetener of your choice. I like to use honey for flavour or liquid stevia or powdered erythritol to keep it low carb.

Add in the rest of the milk and begin to whisk it all together. The mixture will be pourable but will thicken up when it sets.

Mix with a whisk until all of the ingredients are completely merged together. Adjust the sweetness if necessary.

Pour the chocolate flaxseed pudding into ramekins or small bowls and place in the fridge until set. This takes 1-2 hours.

Serve garnished with nuts, fruit, granola, nut butter, and/or chocolate chips. It's perfect for meal prep - breakfast, snacks or dessert!
