Air Fryer Pumpkin Seeds

Begin by removing the seeds from the pulp, rinsing them in a colander/strainer under running water, and then pat them dry with a paper towel. You can also allow them to dry overnight.

Add butter, smoked paprika, tsp garlic powder, cayenne, cinnamon and sweetener of choice to a pot on the stove over medium heat and melt everything together. Turn off heat and salt to taste.

Add the pumpkin seeds to the pot and mix well. You can also add other squash seeds like butternut squash seeds, or a mixture.

Add the pumpkin seeds to the air fryer basket and spread them out evenly. Close the basket and cook for 5 minutes.

After 5 minutes open the air fryer basket and mix the pumpkin seeds around with a wooden spoon. Close and cook for another 5 minutes.

When the air fryer roasted pumpkin seeds are finished they will be a golden colour. Test for crispness - you can cook for 2-3 more minutes if necessary.
