The BEST Paleo Chocolate Chip Cookies

Vegan Paleo Chocolate Chip Cookies will brighten up any day! These cookies are sweet, salty, buttery (with no butter!) and amazing with a glass of unsweetened almond milk. Sweetened only with stevia, these low carb cookies are a must for sharing at home or with friends! This recipe is perfect for an amateur gluten free baker (like me!). These low carb cookies come to 6g net carbs per cookie!

I hope everyone is not going too stir crazy with social distancing right now! I’m really loving being able to connect with family and friends that I don’t usually talk on FaceTime with, or even see too often, although my work life has gone into overdrive as I’m trying to work ahead incase we do get ill here. Another great thing is all of the at-home concerts that are being broadcast – it’s great to “hang out” at Austin, TX shows without actually being there.

After seeing/talking to people more often, the next thing I am really enjoying while spending extra time at home is…baking! Gluten free baking is something that I really want to get into this year, and there’s no time like the present. The only problem is…all of the shops are sold out of flour. All kinds of flour – gluten free, regular bread flour, self raising, you name it. There’s nothing, zilch, squat. Thankfully I just bought a 1kg bag of almond flour a few weeks ago, and now these cookies have been born. They are my favorite cookie recipe to date. They’re not just a good gluten free and dairy free cookie. These almond flour chocolate chip cookies are a good cookie, for any cookie standards. So…let’s bake!

How to make these Paleo Vegan Chocolate Chip Cookies

  • Mix flax meal and warm water together & set aside.
  • Mix all of your dry ingredients together.
  • Melt coconut oil if needed.
  • Add coconut oil and flax meal to the dry ingredients. Mix well.
  • Add chocolate chips.
  • Make 2-3 inch balls with the cookie dough.
  • Place on parchment lined baking tray.
  • Press down lightly on the cookies so that they’re a little flatter. They will expand a bit but you don’t want them to be too thick in the middle or they won’t cook properly.
  • Bake at 160 degrees for 25-30 minutes, or until they are a golden color.
  • Allow to cool completely before lifting them off of the parchment paper. They will be super soft – allowing them to cool will help them hold together perfectly.

Jazz it up!

  • Try different chocolates! I like white, milk or dark chocolate chips (dairy free, of course!). You can use chocolate chips or cut up a chocolate bar into chunks.
  • Add in some nuts! Nuts like walnuts, almonds, macadamia nuts and peanuts are great in these cookies!

Paleo Vegan Chocolate Chip Cookies

Yield: 15 cookies
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

These Chocolate Chip Cookies are paleo, vegan, grain free, gluten free and low carb. The perfect anytime cookie!

Ingredients

  • 200 g almond flour, or ground almonds
  • 95 g stevia, or coconut sugar
  • 1.5 teaspoons baking powder
  • 1 teaspoon bicarbonate soda
  • 2 tbsp flax meal
  • 5 tbsp warm water
  • 90 g coconut oil
  • 100-125 g chocolate chips, use paleo/vegan/keto chocolate chips as necessary, or other mix in.
  • 1/2 tsp salt
  • 1/2 tsp vanilla essence, optional

Instructions

  1. Mix flax meal and warm water together. Set aside.
  2. Mix all almond flour, cocoa powder, stevia, baking powder, bicarbonate soda and salt.
  3. Melt coconut oil if needed (taking care to nat make it too warm).
  4. Add coconut oil and flax meal to dry ingredients. Mix well.
  5. Add chocolate chips.
  6. Make 2-3 inch balls with the cookie dough. You should end up with around 15.
  7. Place on parchment lined baking tray.
  8. Press down lightly on the cookies so that they’re a little flatter. They will expand a bit but you don’t want them to be too thick in the middle or they won’t cook properly.
  9. Bake at 160c/320f degrees for 25-30 minutes, or until they are a golden color.
  10. Allow to cool completely before lifting them off of the parchment paper. They will be super soft - allowing them to cool will help them hold together perfectly.
