Keto Sugar Free Jello Recipe (from scratch!)

Give into your sweet tooth with this easy Keto Jello Recipe! Loaded with simple, natural ingredients and no artificial dyes, this easy sugar-free jello recipe is ready for the fridge in just minutes. It’s perfect for a low-carb keto diet, and kids love it too!

Jello. Wibbly wobbly jelly. Who doesn’t love this timeless treat? From classic jello salads to sugar free jello shots, this fun food is one that we love from childhood to grandparenthood. It comes in every flavor and molds to any shape, perfect for any occasion. However, most jello is pretty high carb. But it doesn’t have to be!

Making your own jello is fun and you can be as creative as you like. I wanted to keep my keto jello recipe super simple and just use lemon juice instead of flavorings, however, the sky is literally the limit when it comes to the flavor of jello. See below for a few suggestions.

By the way, when I mentioned above that kids love it too, I meant my one-year-old son was asking for more and more. He happens to love lemons. Give him a chunk of lemon to chew on and he’s a happy boy.

💛 Why you will love this recipe

  • Easy: This is such a simple recipe to throw together! Whisk all of the ingredients together and let it set. That’s it!
  • Quick: Prep takes less than 10 minutes. Then let the fridge do the rest of the work for you.
  • Simple ingredients: Gelatin, lemon, sweetener, water, and whipped cream. It doesn’t get much simpler than that! It’s perfect for a paleo diet as well!
  • Healthier: This recipe is great for anyone keeping an eye on their blood sugar or calories. Keto desserts are usually perfect for diabetics as well.
  • Everyone loves it: This is one the whole family will enjoy digging into, whether they’re on a ketogenic diet or not!
  • Net carbs: Just 3g net carbs per serving! The jello alone has only 1g net carbs.

🗝️ Key Ingredients

  • Gelatin: I skipped the sugar free jello mix and instead I added a 12g sachet of unflavored gelatin powder to this recipe. If you want to use gelatin leaves instead, use 4 leaves.
  • Lemon juice: I love the addition of this citrusy fresh fruit in the recipe as opposed to artificial flavoring. The lemon aroma comes through perfectly. Lime juice would be a great alternative.
  • Sweetener: I skipped the artificial sweeteners and added my go-to keto sweetener which is a stevia and erythritol blend. Your sweetener of choice will be fine as well, just make sure it has a 1:1 ratio with sugar.
  • Water: You’ll need 2 cups of water: 1 hot (boiled) water and 1 cool water. The boiled water must be cooled for a couple of minutes before adding the gelatine.
  • Coloring: Food coloring is completely optional for this recipe, however, it is so much fun! I try to avoid artificial colors where possible and opted to use PME Natural Food Colouring instead. It turned out so vibrant – I was very impressed!
  • Whipped cream: I whisked heavy whipping cream with powdered erythritol and a little vanilla extract to add a whipped cream topping. You can replace the heavy cream with cool whip, or even coconut whipped cream if desired. Check out my Coconut Whipped Cream recipe for step-by-step instructions!

🥣 How do you make Keto Jello?

Keto Jello

1. Boil water: Boil half of the water and add it to a measuring jug for easy pouring later.

2. Add ingredients: Whisk in the gelatin, sweetener, lemon juice, cool water, and food coloring and continue whisking until everything is dissolved.

3. Prepare setting dishes: Prepare the 4 small bowls or cups that you want to set and serve the sugar-free jello in. I opted to make jello cups with 4 stemless wine glasses. I tilted them in a bread tin so that they would have a fun diagonal slant, but this is entirely optional.

4. Pour the jello: Pour the homemade jello mixture into your prepared dishes and allow it to come to room temperature if it hasn’t already.

5. Chill: Place the jello cups in the fridge and chill it until it is set, about 3 hours.

Whipped Cream

6. Combine: Add the cream, sweetener, and vanilla to a large mixing bowl or stand mixer.

7. Whisk: Whip the ingredients with an electric mixer or the whisk attachment on your stand mixture until stiff peaks form.

8. Serve: Once the jello has set, top it with whipped cream and a few blueberries if desired.

🪄 Recipe Notes and Tips

  • Change colors: Any color of food coloring will work for this recipe! Try a little red to make pink lemonade jello.
  • Different flavors:
    • Lime jello: Instead of adding freshly squeezed lemon juice, try lime juice plus a drop of blue coloring with 1/2 teaspoon of yellow to make green.
    • Orange jello: Add 1/4-1/2 tsp of orange extract and a drop of red food coloring to the 1/2 teaspoon of yellow to make it orange.
  • Lower calorie: Skip the whipped cream or use light cool whip or squirty cream to reduce the calories.
  • Make it paleo: Top with coconut whipped cream to make this treat dairy-free and paleo-friendly.
  • Keto jello shots: Replace the cup of cold water with vodka and pour it into shot containers with lids. Make sure that the gelatin mixture is cool before adding the vodka – you don’t want to burn off any alcohol!
  • Store any leftover jel desserts in the fridge for up to a week.

❓ Can jello be keto?

Yes, absolutely! If you use unflavored gelatin powder or leaves along with freshly squeezed juice from berries, lemon, limes, or natural flavor extract, plus a little zero-carb sweetener, jello can definitely fit into a keto diet quite easily. It’s so fun to make your own versions as well!

🤔 Is sugar free jello allowed on keto?

Technically sugar free jello can easily fit keto macros, however, it does have a lot of artificial ingredients (flavorings, colors, and sweeteners). Commercial sugar free jello would not be allowed on a clean keto diet but a dirty keto diet allows for anything and everything as long as you’re in ketosis.

🤷‍♀️ Does sugar-free jello spike insulin?

Thankfully, sugar-free jello is a great low carb treat that you can enjoy without worrying about your blood sugar levels raising.

Ingredients

Jello

  • 12g/1 sachet unflavored gelatin powder
  • 1/4 (4 tablespoons) cup lemon juice
  • 1/2 cup (50g) sweetener of your choice (I used a stevia and erythritol blend)
  • 1 cup (240ml) boiled hot water
  • 1 (240ml) cup cool water
  • 1/2 teaspoon food coloring

Whipped Cream (See Note 3)

  • 1 + 1/3 cups (300ml) heavy whipping cream (double cream) or coconut cream
  • 1/2 cup (50g) powdered erythritol
  • 1 tsp vanilla extract

Instructions
