This One Pot Gumbo recipe is ridiculously easy, filling and healthy! Packed with chicken and sausage, vegetables, herbs and a kick of spice, you’ll be left wanting more. This dish is perfect for cooler temperatures to warm you up! Paleo, Low Carb (13g net carbs per bowl!) & Whole30 Friendly!
I was doing our weekly shopping online this week and saw that there was fresh okra for sale.
YES. PLEASE.
I don’t think I’ve ever seen okra over here in the UK before so I added it to the cart. Unfortunately when the shopping arrived it was sans okra…out of stock after all! Ach well, Gumbo doesn’t need okra.
The magical thing about Gumbo is that, because of it’s many origins, it can be made with all kinds of ingredients and flavors. Some use different veggies, some have shellfish, some use different spices. My challenge was to create an as-close-to-authentic tasting gumbo as I could get. In the UK we lack certain creole foods – okra, gumbo file powder to name a couple.
Gumbo’s origins
Gumbo is a stew from Louisiana consisting of meat and/or shellfish, an exceptionally flavored, thickened stock, and three vegetables: celery, bell peppers and onions. Other vegetables which often appear are okra and tomatoes. Gumbo is a combination of many cuisines and cultures common in Louisiana, including Choctaw, German, French, Spanish and African. It’s traditionally served over rice, but in this version I include cauliflower rice in the pot – that’s one less thing to prepare!
How to make One Pot Gumbo
- Chop & prep your veggies.
- If your sausage is in a casing, remove the casing and cut into meatballs.
- Dice the chicken.
- Add all of your ingredients to the instant pot, pot or slow cooker.
- If you’re using an instant pot: use meat/stew setting for 30 minutes. If you’re using a Slow cooker: Cook the gumbo on high for 6 hours. One pot on the stove: cook for about 1 hour, until meat is cooked, or longer for flavors to develop.
- I didn’t add anything to thicken the Gumbo any more that it is, but if you want to, use tapioca flour, corn starch (not paleo/whole30) or arrowroot to thicken it as they are gluten free. Take some of the broth in a bowl, add 1 tbsp of flour/starch. Mix well, making a watery paste, and then add it back into the gumbo and stir to combine it all.
Jazz it up!
- Try adding different meats! I used sausage and chicken, but you could add ham, shrimp and other shellfish.
- Make it vegan! Skip the meat and add more veggies. Gumbo Z’herbes is a gumbo made with slow cooked greens.

Easy One Pot Gumbo
Ingredients
- 500 g chicken, diced
- 200 g whole30 compliant sausage, casing removed if any, cut into meatballs
- 1 green bell pepper, diced
- 120 g celery, chopped (about 3 long stems)
- 1 large onion, diced
- 2 garlic cloves
- 450 g cauliflower rice, frozen or fresh
- 400 g can diced tomatoes
- 1.5 tsp salt
- 1 tsp cumin
- 1 bay leaf
- 1/2 tsp oregano
- 1/4 tsp thyme
- 1/4 tsp cayenne
- 1/4 tsp paprika sweet or hot
Instructions
- Chop & dice your veggies - bell pepper, celery, onions.
- If your sausage is in a casing, remove the casing and cut into meatballs.
- Dice the chicken.
- Add all of your ingredients to the instant pot or slow cooker.
Cooking
- For instant pot: use meat/stew setting for 30 minutes.
- Slow cooker: Cook on high for 6 hours.
- One pot on the stove: Add all and cook on a medium heat for 1 hour, or longer to let flavors develop.
